Ingredients

Scale

Crust Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cut into pieces
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 23 tablespoons cold water

Filling Ingredients

  • 2 cups cooked and mashed sweet potatoes (about 2 medium sweet potatoes)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Prepare the crust: In a mixing bowl, combine the flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add cold water one tablespoon at a time until the dough comes together. Press the dough evenly into the bottom of a greased 9×9 inch baking pan to form the crust.
  2. Preheat the oven: Set your oven to 350°F (175°C) and allow it to fully preheat.
  3. Make the filling: In a large bowl, mix the mashed sweet potatoes, sugar, eggs, cinnamon, nutmeg, vanilla extract, and salt until smooth and well combined.
  4. Assemble the pie bars: Pour the sweet potato filling over the prepared crust, spreading it evenly with a spatula.
  5. Bake the bars: Bake in the preheated oven for 40-45 minutes or until the filling is set and the crust is lightly golden around the edges.
  6. Cool the bars: Remove from the oven and let the bars cool completely in the pan on a wire rack before slicing into squares.

Notes

  • You can substitute brown sugar for granulated sugar for a richer flavor.
  • Ensure sweet potatoes are well mashed to avoid lumps in the filling.
  • For easier slicing, chill the bars in the refrigerator for an hour after cooling.
  • Add a pinch of ground cloves or ginger to the filling for extra warmth and spice complexity.
