  1. Preheat and Prepare the Pan: Preheat the oven to 400°F and line a 9 x 5 inch loaf pan with parchment paper or aluminum foil, allowing the lining to overhang the long sides for easy removal. Lightly spray with cooking spray.
  2. Sauté Onions and Garlic: Heat a large skillet over medium-high heat and add the olive oil and diced onion. Sauté, stirring frequently, until the onion becomes translucent, about 5-6 minutes.   4. Mix Meatloaf Ingredients: Add the cooled onion and garlic mixture, lean ground beef, egg, 3 tablespoons of gluten-free ketchup, Worcestershire sauce, Italian seasoning, 1 teaspoon ground mustard, salt, and black pepper to the bowl with oats.
