Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons espresso powder
  • 1/4 cup unsweetened cocoa powder (for dusting)

Wet Ingredients

  • 1 cup mascarpone cheese
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookies.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, espresso powder, baking powder, and salt until well combined.
  3. Cream Butter and Sugar: In a large bowl, using an electric mixer, cream the softened butter and granulated sugar together until the mixture is light and fluffy.
  4. Add Eggs and Mascarpone: Beat in the eggs one at a time, followed by the mascarpone cheese and vanilla extract, until smooth and fully incorporated.
  5. Combine Ingredients: Gradually add the dry ingredients to the wet mixture, mixing at low speed just until the dough comes together.
  6. Shape Cookies: Scoop tablespoon-sized portions of dough and place them onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake Cookies: Bake in the preheated oven for 12–15 minutes or until the edges are lightly golden and the cookies are set but soft in the center.
  8. Cool and Dust with Cocoa: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Once cooled, dust the tops generously with cocoa powder for an authentic tiramisu flavor.

Notes

  • Ensure the mascarpone is at room temperature to blend smoothly into the dough.
  • Use freshly brewed strong espresso as a substitute if espresso powder is unavailable, but reduce liquid in the recipe slightly.
  • For a more intense coffee flavor, sprinkle a little extra espresso powder on top before baking.
  • Store cookies in an airtight container at room temperature for up to 3 days or freeze for longer storage.
